Brewing Tips

What if there was a skilled roaster who selected and prepared the best coffee for you at the touch of a button?

What if this roaster gave you the personalized attention that you can only find in traditional neighborhood shops?

Well, this roaster exists and you've just found it, it's called Hayman.

Hayman was born in 2014 with the mission of offering you a great selection of fresh specialty coffee and no-effort-spared attention to detail. We are grateful for having had the chance of serving thousands of customers, whom we consider friends. We are proud of knowing the names of our regular customers by heart. Our team works hard to bring you the best coffee and to surprise you with those details that matter. We aim to constantly improve, while also improving the world around us.

To be graded specialty coffee, arabica beans need to score at least 80 points on a 100-point scale with objective quality standards. Most coffee doesn't make the cut and therefore is not part of our offering to you.

Your coffee is roasted only when the order is received in our roastery for maximum freshness. Coffee starts losing aroma and flavor right after leaving the roaster, and this happens even faster if it is ground.

Coffee is delivered in the most convenient format to you. All coffee is available as whole bean, ground, coffee pods, and even as unroasted green beans for those who prefer to do the coffee roasting themselves.

We work directly with coffee farmers and with importers who share our goal of empowering farmers with fair pay and long-term partnerships. We use only low-emission roasting equipment in our modern facilities.

If possible, use a burr grinder instead of a blade one. A quality burr grinder ensures an even grind and therefore a good extraction. Try to grind your coffee just prior to brewing and grind only the amount you need. Coffee preserves freshness for longer as whole bean than as ground.

To use the right coffee-to-water ratio is key, so it pays off to invest in a good digital scale to measure by weight. Depending on the coffee brewing method, we suggest a coffee-to-water ratio between 1:13 and 1:17. The exception is the espresso, a .85?1.2fl oz (25?35ml) beverage prepared from .25-.32 oz (7?9g) of coffee.

Given that brewed coffee is about 98% water, it is easy to understand why water quality is crucial when it comes to coffee brewing. Whether you run tap water through a carbon filter or you opt for bottled water instead (aim for water with a pH level of 7), the important thing is to make sure your water tastes good.

We recommend storing your fresh roasted specialty coffee in the original Hayman coffee bag, which comes with a one-way degassing valve and a zipper seal to lock in freshness, or alternatively in an airtight container, and then placing either of them in a cool, dark place.
