Traditionally when yerba mate comes from the field it is flash dried using a zapecado which is a large tumbler with a wood fire and a fan blowing very hot air and smoke over the leaves and stems. Then the drying is completed using lower temperatures in which more smoke may or may not be added. This flavor profile is very popular in Argentina, Uruguay, and Paraguay.
Our Organic Yerba Mate is processed using a modern dryer with much lower temperatures for a longer time and allows no smoke fumes to contact the yerba mate. This yerba mate has a much more natural taste, it is softer and lighter in flavor. Many long time traditional yerba mate drinkers are disappointed in the taste because it lacks the traditional toasted, smoke flavor.
